1 lb lean ground beef (or turkey, or chicken)
4 slices UNCURED bacon, coarsely chopped
2 tsp Dijon mustard
2 tsp Worcestershire sauce
1 tsp garlic powder
1/2-3/4 cup red onion, finely diced
1 (14.5 oz) can diced tomatoes, drained
3/4-1 cup reduced fat cheddar cheese, shredded
Himalayan sea salt & fresh cracked pepper, to taste
In a 12″ skillet, cook bacon until done to your satisfaction. Remove and dice the bacon into small pieces.
Brown meat, breaking it up as it browns.
When meat is browned, add everything else except bacon & cheese. Mix well.
Cover and let simmer on low for 10-15 minutes, stirring occasionally.
Sprinkle cheese, then crumbled bacon over meat mixture, recover until melted.
Serve with bibb lettuce leaves (best choice for dinner) OR
1 small (6 inch) whole grain pita.*
